DIY Christmas Gifts: Cookies









Hey Everyone!
I hope you are enjoying your Holiday Season :) 

Every year I make Shortbread Cookies & Sugar Cookies to give to friends and family. 
This year I made shortbread with chocolate chips, cinnamon-sugar rimmed sugar cookies and shortbread dipped in dark chocolate and crushed candy canes.
It's a great last minute gift idea, it's fun, pretty and easy to do, here are the recipes: 

Shortbread Recipe (my mom's) 
Ingredients:
  • 1 cup  flour
  • 1/2 cup corn starch
  • 1/2 icing sugar
  • 3/4 cup  butter
  • Chocolate chips (as many as you can mix in)
  • Dark Bakers Chocolate (for dipping) 
  • Crushed Candy Canes
Directions:
  1. Sift together dry ingredients.
  2. Blend in butter until soft, smooth dough forms
  3. Roll dough to 1/4 inch balls and press flat 
  4. Bake at 300 for 15-20 minutes
  5. Cool and Decorate 
Sugar Cookie Recipe: (Martha Steward Living
Ingredients:
  • 2 cups all-purpose flour, plus more for rolling
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup (1 stick) unsalted butter, room temperature
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Cinnamon Sugar for rolling 
Directions:
  1. Mix dry ingredients in bowl 
  2. cream butter and sugar until light and fluffy
  3. Beat in egg and vanilla. gradually add flour mixture; beat until combined. 
  4. Divide dough in half; flatten into disks. 
  5. Wrap each in plastic; freeze until firm, at least 20 minutes, or place in a 
  6. Preheat oven to 325 degrees. 
  7. Line baking sheets with parchment. 
  8. Roll out 1/8 inch thick between two sheets of floured parchment
  9. Dip edges in cinnamon sugar 
  10. Bake, rotating halfway through, until edges are golden, 10 to 18 minutes
